       Energy-Revving Quinoa

            Energy-Revving Quinoa Recipe

    This meatless meal of Energy-Revving Quinoa keeps you energized between meals or after a workout.

  • Yield: Makes 1 serving (serving size: 1 1/2 cups)
  • Calories per serving: 337

Ingredients

  • 1 cup cooked quinoa
  • 1/3 cup canned low-sodium black beans, drained and rinsed
  • small tomato, chopped
  • scallion, sliced
  • 1 teaspoon olive oil
  • 1 teaspoon fresh lemon juice
  • Pinch of salt
  • Pinch of freshly ground black pepper

Preparation

In a medium bowl, gently toss all ingredients to combine.

Quinoa can be so yummy but be sure to rinse it before cooking or you might get a bitter and unyummy dish
