Made this tonight for dinner & me & the hubby loved it! It was perfect paired w/ a spinach salad. 1 spaghetti squash made enough for 6 portions! I mean if you want to do cost control, this would be perfect! You spend about $5-$6 & you get 6 portions!
1 - 1 1/2 lbs ground turkey
1 clove garlic, minced
1/4 cup panko crumbs (or regular breadcrumbs)
1/2 tbsp oregano
1/2 tbsp basil
1 can diced tomatoes
1 can tomato sauce
Mix all together (except for cans of tomatoes) and form into balls about the size of a half dollar coin. In the bottom of a crockpot, put half of the can of the diced tomatoes & half of the can tomato sauce. Mix together. Put meatballs in pot then cover with remaining tomatoes & sauce. Cook on high for 5 hours.
Preheat oven to 375 degrees. Cut squash in half lengthwise then take out seeds. Place cut side down on a baking sheet and add 1/4 cup of water. Bake for 45 minutes. Take out & cool down. Once cooled, take a fork and scrape out the inside of the squash. It will come out looking like angel hair pasta. You can start making this about an hour before your meatballs are done, so everything will be nice & hot.
