I have some in the freezer, what should I make with it?
First, if I don't marinate my flank steak all day, I'm disappointed. It can be such a tough piece of meat.
Anyway, I typically do a traditional meat and potatoes type meal with flank steak.
- oven roasted red or sweet potatoes- salad- marinated mushrooms and onions- maybe a fruit or maybe bread and butter

i've made quesadillas w/peppers with it!
potatos & a veggie. I'd season it with pepper & garlic sea salt :) yum!

Mmm, lots of good ideas here!
AKA skirt steak :-). Pound some meat tenderizer into it, thinning it out. Marinate if desired. Make stuffing with onions, garlic, bread cubes, season as desired, moisten with beef broth. Spoon stuffing along center of meat, roll tightly and tie up with string. Pour broth into roasting pan, oven 350* roast on rack, covered till tender, pan drippings great for gravy. My grandmother always called this 'mock duck'. :-) I wish I could ask her why!
veggies, baked potato or salad
When it's on sale I will buy several, and I put each of them in a freezer bag with the marinade IN the bag, that way when I pull it out of the freezer to defrost it, the marinade really sinks in and I don't need to worry about it! I usually do a teriyaki marinade or a "Bloody Mary" marinade with tomato juice, vodka, onion, Worcestershire Sauce and pepper.
