My kids don't like hummus with garbonzos but they tried this recipe this week and both of them liked it. My oldest said it tastes like tacos? Not really.... but I can see his point. I thought I'd share the recipe. I personally love this recipe and have had it for lunch with whole grain pita and veggie sticks many times.
1 clove garlic minced
1 15oz can black beans; drain reserve liquid
2 Tb freshly sqeezed lemon juice
1 1/2 Tb tahini
3/4 tsp ground cumin
1/2 tsp salt
1/4 tsp cayenne pepper
1/4 tsp paprika
10 Greek olives
Add all ingredients except paprika and olives into food processor or blender and process until smooth. Add additional seasoning and reserved liquid to taste. Garnish with paprika and greek olives.
Enjoy!

I have been trying to think of how to add more beans to our diet for the fiber. So thank u very much for the recipe! I'm a big fan of black beans
This is my favorite bean recipe:
Sweet Potato Burritos
3 teaspoons olive oil
1 onion, chopped
4 cloves garlic, minced
6 cups canned kidney beans, drained (I use home cooked black beans; you can use any bean)
2 cups water
3 tablespoons chili powder
2 teaspoons ground cumin
4 teaspoons prepared mustard
1 pinch cayenne pepper, or to taste
3 tablespoons low sodium soy sauce
4 cups cooked and mashed sweet potatoes
12 whole wheat tortillas, warmed
shredded cheese (whatever you have)
Preheat oven to 350 degrees. Heat oil in a medium skillet, and sauté onion and garlic in until soft. Stir in beans, and mash. Gradually stir in water and heat until warm. Remove from heat, and stir in the chili powder, cumin, mustard, cayenne pepper and soy sauce. Divide bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style. Bake for 12 minutes in the preheated oven, and serve. NOTE: I put the cheese inside and freeze burritos wrapped in wax paper in a big zipper bag; they can be microwaved safely in the wax paper.

This freezer idea would be perfect to keep on hand for my always hungry teen daughter! Especially since she doesn't want to have to cook.

I cooked black beans for the first time yesterday. My kids loved them! I like the hummus & burrito recipes. I will try them both soon!
I love black beans, they are my favorite bean. They also taste awesome in a black bean salad with fresh tomatoes, corn etc and use corn chips for dipping. I'll have to find that recipe and post it too. I also add them to my salads and to taco meat.
