It's a medium-chain fatty acid that is both a) rare dietarily and b) very healthful, especially in conjunction with Omega's like olive oil.  Only coconut oil and palm kernal oil provide the medium-chain fatty acid benefits.  It is an anti-inflammatory and potentially an anti-microbial also.  Research has demonstrated that it can improve and potentially ward off the short-term memory loss associated with Alzheimer's disease, and it has been recommended for those with gastro-intestinal ailments like persistent reflux.  It's supposedly very good for your brain, overall.

I am not a huge fan of cooking with it but I use it liberally on my lower body.  For some reason, it clogs my pores on my torso, neck and in I accidentally transfer any of it to my face.  I rub the kids down after every bath with it.

I just got my sister hooked on it as a body moisturizer.

We use it primarily as a body moisturizer. I still prefer olive oil for cooking/baking.

I use it for cooking - I find it to be so much lighter than olive oil!  So if it's something where I don't want the flavor of olive oil that's what I use instead.

I also use it on diaper rashes (since it's cloth diaper safe).

I found a recipe for coconut oil fudge that I'm wanting to try as well!
