Vegetable of the week. ~ Kale

 Kale is a good source of beta carotene, Vitamiin C and K.    Kale is a form of cabbage and has green or purple leaves

Do you like Kale?  Do the kids?  Any recipes you want to share with kale?

 I make kale chips

I toss with olive oil and sea salt and bake for about 20 minutes in a 275 degree oven. 

Kids also like fresh grated parmesan on them

I got some last year with my CSA and it went bad before I used it.  I kept trying to remember to pick stuff up to use it with and then I didn't.  I felt so wasteful!  I want to try it sometime.

We love kale. I make spicy and regular kale chips, I use it in smoothies, I sautee it with mushrooms, onions, lemon juice, sea salt and pepper, and I turn it into a salad.

I like it best with fresh cracked black pepper adds a little spice with the Parmesan

What do you use for spicy kale chips. We love spicy around here
