Okay, I'm lazy and I don't feel like sorting through last year's posts to try to find your sweet potato casserole recipe ladies!  LOL.

We are going to my MiLs this year so this weekend I'm actually making the entire meal for my family because I like to cook it all.... I'm making a few small adjustment. Instead of a traditional turkey I'm making a Cajun turkey breast.
Mashed garlic potatoes
Sweet potatoe casserole mine has a coconut brown sugar topping
Rosemary roll ( thanks to watching Pioneer woman).
Green beans with rosemary

Oh I'm going to have to go check out Pioneer Woman!  May I please, please have your Sweet Potato Casserole recipe?  Cajun turkey breast sounds fantastic!

My family love this sweet potato casserole so I make a large amount

4-6 good size sweet potatoes (cut boiled and mashed)
1/2 teaspoon salt
1tsp vanillia
1cup sugar
1/2 stick butter
1/2 half cup evaporated milk
2 eggs
( blend together and I use large glass dish for baking )

For the topping
1 cup flour
1 cup brown sugar
1 cup coconut
1/3 cup melted butter
Blend and crumble over the top
Bake 350 for 30 - 40 minutes ( depending on your oven it should be golden brown)

It smells great and my kids are already asking for it!  I let them taste the topping and it's fantastic!
