I've heard that an amazing alternative to mashed potatoes is pureed cauliflower. Same texture and if you add garlic powder and margarine, same flavor. It's a much healthier choice and i'm sure we could trick our brains with it.
Actually the next time I go grocery shopping I was gonna pick up some cauliflower and either make cauliflower lasagna or potatoes(lol). Both are a great low calorie dish and soooooooooo good.
My family loves when I make the "fake mashed potatoes" although I dont think they really taste the same or have the same texture as real potatoes, however they taste so good you dont miss the potatoes. They also like when I cook the cauliflower, add a little butter and pepper and mash it up.
