Healthy Fettucini Alfredo !( fake-out! )

 Hey ladies! I've got a fake out recipe that turns regulare fettucini alfredo to a healthy version, that actually tastes great!!  here it goes:

( this recipe serves 2 so adjust as needed )

 

1/2 lb. cooked whole wheat pasta

1/2 head cauliflower, core removed and broken into small florets

2 tbsp. olive oil

2 shallots minced

1/2 c. chicken stock

1/2 c. grated parmasean

salt and pepper to taste

 

steam cauliflower 20 min. or til very soft. put to side. In a small saucepan heat olive oil over med-low and add onions, cook til translucent. Add chicken stock cook 5 min. longer. set aside to cool.

In a larger blender combine cooked cauliflower, and onion mixture, puree til smooth*. Pour into saucepan and heat through. toss with pasta and top with grated parmesean!  Bon Appetit!!

* I doubled mine and had to add a little water in the blending process to get it going. add to your liking or thickness desired!

HMM. Thank you! I usually get by with buying the powder packets, then using skim milk and fresh parm IF I want to that day...

 this sounds awesome! I would use spaghetti squash instead of the pasta, but I think this sounds awesome! i make my mashed potatoes out of califlower as well.
