well, mine is boring,, but my usual is romaine lettuce topped with chicken breast or deli turkey  meat.... a few cherry tomatoes... dressing is homemade EVOO/vinegar... or light ranch.... i need some ideas too!!

I've managed to "slim down" a ton of things...

Mashed cauliflower

Mashed potatoes

Greek pasta

Chicken pasta

I made chicken cordon bleu last night- 298 calories per serving

Tonight- Roast pork with cranberry and apples( 275 cals per serving), turmip/parsnip gratin( 189 cals per serving) and most likely broccoli as well...

Veggie bagel sandwhich....when i first saw this i was like ewww...theres not meat at all....it cant taste good. but then i found myself craving it and it is so delicious you just have to try it before you judge it.

VEGGIE BAGEL SANDWHICH:

1 plain bagel ( or any flavor of your choice )

*dijon mustard on one half of bagel

*peperjack cheese melted on other half of bagel

*Lettuce

*green pepper

*red onion rings

*slice of tomato

* slices of cucumber

 

Its a really good sandwhich.

I love tomato sandwiches.

multigrain bread

 fat free mayo

and a slice of tomato!

What do you put in your Greek and chicken pastas? I've been wanting to try mashed cauliflower, but haven't done it yet. The turnip/parsnip gratin sounds interesting, too.

I love meatless sandwiches, this sounds pretty good.

My current fave is homemade veggie burgers, homemade sweet potato "fries" (baked of course!), and steamed broccoli. LOVE it!
