Try a Pimped Out Summer Fruit Salad!

Pimped out summer fruit salad

Ingredients

2 cups strawberries, rinsed and quartered

2 cups blueberries, rinsed

4 peaches, rinsed and chopped (leave skins on)

4 kiwi fruit, rinsed, peeled, and sliced

juice from 2 limes, zest from 1 lime

2 teaspoons honey

1 handful mint, torn or chopped

Directions

1. Rinse and chop strawberries, peaches, and kiwi fruit. Measure out 2 cups. Place in large bowl.

2. Rinse blueberries. Measure out 2 cups. Add to large bowl.

3. Roll lime on cutting board to release juices. Cut in half. In small bowl, squeeze juice from lemon or lime. (Remove any seeds!)

4. Add 2 teaspoons honey.

5. Rinse and chop or tear mint. Add to small bowl. Stir ingredients to combine

6. Pour the mint mixture over the fruit in the large bowl. Stir gently to combine.

7. Refrigerate for 30 minutes to 1 hour to allow all flavors to come together.

yummy ill have to give this one a try!! I'm not a big fan of fresh peaches though is there another fruit i could substitute it for?

Oh yeah! You could do mango... or leave the peaches out. To be honest, you can do ANY fruit combos you love. Let me know if you like it!

ok so i did lemon instead of lime , mangos instead of peaches and i forgot the kiwi. ugh BUT i really enjoyed the one i made and so did my DD . i never thought she would go for the lemon but she was fine with it . she is 18 m and loves fruits and veg. im lucky lol. Next time i make it ill have to remember the kiwi :) thank you so much!!

can i leave out the mint? i know my local grocery store doesnt carry basically anything fresh, and def no herb type things... and im not sure if the slightly bigger store the next town over does either.... guess people in Iowa just dont care for fresh herbs and seasonings.
