MFP is telling me I need to eat 1280 to lose 2 lbs a week. I am having trouble meeting that number. I always eat under that. What should/could I do? Just eat more?

Oh boy....
MFP has a default of 1200.
BMR is the number of calories your body burns daily by lying in bed and breathing...so, your body naturally burns 1826 calories just breathing with no other activity. You have to eat at least that much for normal bodily functions- heart, liver, lungs...if you consistently eat too little, your body will begin to store fat as fuel and burn lean muscle mass instead.
What are you eating? Will you post a day's worth of food for me to check out and offer suggestions? Sometimes another set of eyes helps. I find that adding healthy fats and proteins increases my calories and keeps me full for longer.
MFP is also set up to lose 1 lb per week. If you go into your settings and go to goals, you can customize your calorie intake to my numbers. Once you put in the numbers I have given you, you don't eat back calories...just stay within that range.
Lunch: 2tbsp each sour cream and salsa, sea salt and olive oil flatbread crisps, 1 tbsp creamy pb, 500 mL water
Dinner: one HD, one HB w/ bun, 2tbsp rotel dip, and 1 serving chips.

My parents. They (dad) isn't to big in veggies.
Quoting Kristenn:
Start the morning with a good breakfast like maybe eggs, oatmeal, something like rhat, and a fruit! That will help your metabolism. Add more fruits and veggies to your diet, because I don't see much at all. Less chips, and more veggies. Eat chicken breast and sweet potatoes or something like that for dinner.
Quoting LMommy11:
Normally I eat lots of fruit and veggies. That was a bad day. Plus we grilled that night at
