I really love these lentil enchiladas (scroll WAY down to find the recipe). They are super easy to make and come out delicious. Even my meat crazy husband doesn't mind that they are vegetarian:
Otherwise, I usually just soak pinto or black beans overnight and run them in the crockpot to supplement tacos or something else I'm cooking.
I love to make fajitas with black beans. bell peppers, onions, garlic, sometimes corn. black beans. all on some wheat tortilla, hopefully one with fiber and not too much sodium. lol.
I also sometimes have beans on my homemade pizza.
And I love eggs with beans, peppers, and onions too
I hate beans. :( I eat blackbean burgers though!
