My grain-free low-carb menu for Oct 28 - Nov 3 (if anyone is interested)


As always, this is a grain-free menu. 


October 28 – November 3, 2012


Sunday:

breakfast - breakfast bake, veggie juice

lunch - leftovers

dinner – crockpot BBQ chicken/coleslaw/mockaroni & cheese


Monday:

breakfast - egg & bacon waffle sandwich, veggie juice

lunch - leftovers

dinner - deviled Swiss steak/honeyed carrots/salad


Tuesday:

breakfast - tomato & basil quiche, veggie juice

lunch - salmon patties/side salad

dinner - chili chicken breasts/steamed broccoli/sweet potatoes


Wednesday:

breakfast - breakfast salad, veggie juice

lunch – chicken stew

dinner - Italian meatball bake/salad


Thursday:

breakfast - sausage/spinach/cheddar frittata, veggie juice

lunch – individual chicken pot pies, salad

dinner - parmesan herb chicken leg quarters/steamed peas & carrots/salad


Friday:

breakfast - veggie hash/poached eggs, veggie juice

lunch – bratwurst, side salad

dinner - ranch baked tilapia, steamed Monte Carlo veggie mix


Saturday:

breakfast - omelet with peppers & onions, veggie juice

lunch – leftovers/clean out the fridge

dinner - crockpot Laredo beef roast, green beans, shredded carrot salad

This sounds really good.  I am having some diet challenges (not weight) since my surgery this summer which has caused some intestinal challenges and I have been told that gluten, corn and some other products could possibly be a part of the problem.  So I have been eating more fruits and veggies.  I have always been more of a veggie person anyway but I really like this plan.  Just curious how do you make chicken pot pies since they usually are in dough?    Also - not trying to be a knob or anything - what is laredo beef roast?  I would be very interested in some of your menus you have created for yourself if you wouldn't mind.  Thank you for sharing this:-)

I use coconut and almond flours to make anything with a batter or dough.  They don't work the same as grain flours, so I have a recipe that is specifically written for the nut flours.

Laredo roast beef is a fancy name for beef roast with BBQ sauce and veggies on it ;)
