I make a sweet potato hash that is awesome! I shred sweets, apples, add garlic powder, dried chives, and lemon pepper Mrs. Dash.. I cook it in coconut oil and DH devours it! Totally Paleo and yummy!! We strive for Paleo for at least breakfast and dinner... lunches are sandwiches on occasion as it is just easy for me since I have to feed a hungry kid after school, myself and the boy and I've already gone to the gym and run errands... pure laziness. LOL
I make a hash too for breakfast in bacon fat, I think tomorrow I will add sweet potatoes to it.
