I had leftover from last night's dinner where I cooked ll day and we had company :)
Smoked chicken (no skin or bone), fresh green beans baked with bacon and almond slivers, and red roasted potatoes with spicy italian sausage, garlic and onions. very good :) not one of the best meals for myself, but delicious and portion controlled.
We are having spaghetti and butternut squash, eggplant slices, angel hair, and some homemade alfredo sauce I'm making.
I'm making my chili-lime tilapia with mango salsa! Probably going to have brown rice and salad on the side.
