Messing around in the kitchen I discovered these delicious 280 cal each salmon spinach egg melts!

Had to share! Here's the recipe:

Half can of sockeye wild pacific salmon
Half a small onion
3/4 cup baby spinach ( coarse chopped)
1 large hard boiled egg (chopped)
2 tbsp calorie wise miracle whip
1 tsp mustard
2 slices of whole grain bread (weight watchers or body wise bread: recipe = 180 calories)
Top with shredded cheese (I used marble) much less than 1/4 cup finely shredded. Broil for a few mins to melt cheese!

Enjoy! Let me know if you try this and how it was! I was surprised at how good it was. More moist than tuna and a milder fish taste. One melt has 18 g of protein and 13 g of fat however most is poly and mono unsaturated omega fats which are good for us. Also has good amt carbs depending on the bread you choose. Excellent post or pre workout meal!

This recipe makes 2 melts.
