I made meatloaf-stuffed veggies (zucchini, tomatoes and artichokes). I put the innards of the tomatoes in the meatloaf (strained out the juice and poured it in the pans), as well as the innards of the zucchini, along with some puréed cauliflower. I also made each if us one tomato with brown rice. Once they'd baked for an hour with foil, I took off the foil and sprinkled on some mozzarella. Super tasty!!

Mmmhhh... that looks good! I had two homemade chicken breast flautas and an orange. I know, I missed some veggies but it was kind of late and I was famished :/

We hadAlfresco sweet apple chicken sausage, chicken flavored rice and broccoli.

Quinoa seasoned with basil with chicken breast, zucchini, carrots, bell peppers, broccoli, cauliflower, onions and kale stir-fried with a bit of coconut oil and half a squeezed lemon, turmeric, garlic and sprinkled with sesame seeds. Yum!

Looks good!  We had chorizo quesadillas...hubby's favorite!

Red quinoa with artichoke hearts, sun dried tomatoes, and oliv oil and vinegar dressing. It's weird but I love it. The baby nursed and my oldest didn't eat. I think she has strep though. Poor baby.

I had a delicious salad.. I made a huge bowl so I have leftovers..

2 heads of romaine chopped

3 roma tomatoes, seeded and chopped

1/2 cup of Kalamata olives, chopped

1 cup feta cheese

2 TB chopped parsley

2 TB chopped cilantro

1 cup chopped cucumber

Dressing- 3 TB fresh lemon juice and 2 TB olive oil...

chicken fajita pizza made with an almond flour crust.  Even my 16 month old granddaughter devoured hers!

By the time I got home from work after running errands, I was very hungry. At work for my 4 hr shift I atea fiber 1 bar, a quaker oats cookie w/choc.,almonds, water and a tangerine. I ate a fiber 1 brownie (90 cal.) in the car on the way home.Soi at home I just at a carolina pride sausage w/ sliced cheese,ketchup,mustard, and iced coffee.
