I have made eggplant hummus and it was easy.  I found the recipe online though.  I left out the tahini since it isn't something I have in the house.  Basically I roasted the eggplant in the oven with olive oil salt and pepper, scraped out the flesh and used my blender to mix it with olive oil, garlic and garbanzo beans.  The recipes are all over google.  I can't remember the proportions and I can't make a clickable link but they should be easy to find.  :-)

My hummus recipe varies by my mood at the time, but here are the basics:

1 can of chicpeas (drain the liquid but save some.)

2T of chickpea "liquid" (more or less depending on how smooth or chunky you prefer it)

1T Lemon juice

1T cumin (more or less depending on your taste)

1-2 T tahini (i like more, adds extra protein and healthy fat)

.5-2 t cayenne (depending on your heat preference)

2 cloves crushed garlic (I like fresh better than from a jar)

grind in food processor until smooth.

Be careful with the garlic. The flavor comes out stronger after it chills so don't be tempted to over-season.

Good luck.  It's really a trial and error based on your own tastes.  My preferences change batch to batch!

I never USED to like it... but, after being brave and trying it a few different times - different flavors and eating it on different things... now I do like it.  I love it best on baked pita chips w/a little bit of sea salt.

Gotta remember as moms they tell us that the average child needs to try something on average 7 times before they truly know if they like it or not - some kids it can take up to 12 times.  You gotta figure that we as adults can be even more stubborn when it comes to change and trying new things.... right?

I never liked it either until I had homemade. For me it tastes sooo much better.

This is basically the same as my Armenian FIL taught me to make hummus. The only changes are he uses the whole undrained can if chickpeas, and only sprinkles cayenne on top (though that was probably for my benefit as I don't like spicy stuff). It really is trial and error to find your perfect taste.
