Makes: Three 8″ tortillas

Ingredients for Simple Paleo Tortillas:

2 eggs
1 teaspoon melted ghee (sub: melted coconut oil)
Update: 1 Tablespoon water makes the batter more spreadable / thin
1/4 cup arrowroot powder
1 teaspoon coconut flour
Pinch of salt
If making crepes for a sweet application, add 1/4 teaspoon vanilla extract

I then used about a tbs of bacon, 1/2 oz sausage, kale, onions, and feta cheese for the inside. They were very tasty and only around 230 calories for 1.

Fajita Spinach Pizzas

Bake fat free fajita shells in oven for a few minutes on 350 to a "very light" golden brown

Take out of oven and add toppings

Fresh spinach leaves

Fresh tomatoes chopped up

Fresh mushrooms sliced

Whatever other veggies you want

Sprinkle with Goat cheese or low fat mozzarella

Place back in oven till cheese melts
