for me would be the tuna salad, that's my favorite dinner.

lettuce, cherry tomatoes, and for the tuna I prepare a mix of plain yogurt and mustard.

I would go egg or tuna, especially if you have a homemade mayo.

I like a little plain greek yogurt, avocado chunks, apples, spinach, pecans and then whatever protein you choose.  I will add spicy brown mustard if I have it, and some jalapenos (I like tang and spice).  Hahaha - maybe mine isn't so simple?? But I have these things in my fridge/pantry almost all the time.

I mix my homemade mayo (2 tablspn) with a half cup of greek yogurt and let the flavors blend.  Then make my egg/chicken/salmon salad with that.

What's your homemade mayo recipe? I've never made my own.

Egg/tuna or egg/tuna (mixed) or chicken/egg (mixed). Light mayo, raw onions, lettuce, cherry tomatoes and mustard.. some seasoning.

I made a delicious chicken salad: I poached the chicken and shredded it. Added half a mashed avocado, a little lime juice and some slivered almonds. So good! And full of good fats :)
