It's Cinco de Mayo! Let's celebrate with good, clean food!

Here are 5  Cinco de Mayo inspired clean recipes for you to enjoy!


Clean Fish Tacos

Ingredients:

  • 8 ounces raw fish (trout, salmon, tilapia, halibut, cod or shrimp)
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 4 small, whole grain tortillas
  • 1/2 cup grated cucumber
  • 1/2 cup grated carrots
  • 1/2 cup chopped napa cabbage
  • 1/2 cup chopped cilantro, fresh
  • 1 cup non-fat greek yogurt
  • 1-1/2 tablespoon lime juice
  • Chili powder to taste
  • 4 clean tortillas

Directions:

  1. Rub 1 large fish fillet with cumin and chili powder.
  2. Cook in pan sprayed with olive oil.
  3. While the fish is cooking, grate the carrots and cucumber, and chop the cabbage and cilantro. Set aside.
  4. Break fish into small pieces and divide into 4 small whole grain tortillas.
  5. Make the sauce by mixing the yogurt with the lime juice and chili powder.
  6. Top each taco with yogurt sauce.
  7. Sprinkle on the cucumber, cabbage and carrots. Top off with the cilantro.

Clean Chicken Fajita Soup

Ingredients

2 red bell peppers, chopped
1 orange bell pepper, chopped
1 yellow bell pepper, chopped
2 red onions, chopped
1 tbsp. olive oil
4 large chicken breasts, cut into small cubes
1 lb. frozen, organic corn
8 cups chicken broth, no sugar added, low sodium is best
2 tbsp. cumin
2 tbsp. chili powder
2 tbsp. onion powder
1 tbsp. garlic powder
1 tbsp. dried cilantro
1 small bunch fresh cilantro for garnish

Note: This is a very thin soup. Very light and perfect for spring or summer. However, if you want a thicker broth, add 1-2 tbsp. cornstarch or whole wheat pastry flour to a small amount of the chicken broth in a small pot. As you warm it, whisk vigorously. Once well combined, add to the big soup pot and continue as usual.

Directions

Step 1 - Saute' the bell peppers and onions in the olive oil using a large
soup pot.

Step 2 - Add in the chicken and cook, stirring frequently for
approximately 5-10 minutes, or until chicken is nearly cooked through.

Step 3 - Stir in corn.

Step 4 - Pour in broth and add the spices.

Step 5 - Bring to a light boil and cook until the chicken is cooked
through and all ingredients are warmed through. (Approximately 10-20
minutes)

Cilantro Salsa

Ingredients:

  • 5-6 small-medium tomatoes
  • 4 small garlic cloves (or two large ones)
  • Jalapeño peppers (choose the type & amount based on how spicy you like your salsa)
  • Cilantro (about 1/2 cup chopped, but again, use to your liking)
  • Red onion (1 large or two small)

Directions:

  1. Chop all your ingredients. Be sure you chop them well. The finer you chop everything, the better texture your salsa will have.
  2. Mix in a bowl and serve.

Ingredients:

  • Equal Amounts Of:
  • Mango
  • Watermelon
  • Cucumber
  • Jicama
  • Oranges OR pineapple
  • Lime juice
  • Chili powder
  • Salt to taste

Directions:

  1. Cut all fruits and veggies up into small chunks. Texture really is a part of this meal. Large chunks will make it less enjoyable.
  2. Stir all ingredients together in a large mixing bowl, tasting as you flavor with the lime juice, chili powder and salt.

Ingredients:

  • 1/2 cup fresh squeezed lime juice
  • 1/2 cup water
  • 2 tablespoons honey
  • 1/8 teaspoon pure orange extract
  • Ice

Directions:

  1. Combine all ingredients together in a large container and stir or shake (with a lid on, please) until the honey has dissolved.
  2. Make your margarita as you typically would. I used Jose Cuervo Especial – Tequila Gold.

Note: The lime flavor on this is fairly strong (just the way I like it!). If you prefer a weaker lime flavor, add an additional 1/4 to 1/2 cup water depending on your tastes.

Also, while I choose not to use agave, I know there are lots of clean eaters out there that do. If you prefer a sweeter margarita, agave nectar is the way to go here. You can only add so much honey before the flavor of the honey takes over. It’s all a matter of personal taste and choice. This recipe is pretty versatile.

Thanks for sharing.  I love cooking Mexican food and these recipes sound yummy!
