Summer Cooking

Looking for some new summer suppers, any ideas? I am looking for something light & lil more healthy. Tired of pastas, stews, gumbos, pot pies I feel like its so hot and we cook so much heavy stuff! Thanks Mommas!

I'm getting ready this weekend to try a recipe I found in the Sunday coupons. It's teryaki turkey burgers. They sound sooo yummy.

These are from www.dole.com/hula

Teriyaki Pineapple Turkey burgers

Ingrediaents:

1 Can(20oz) Dole Pineapple slices

1/2 cup teriyaki sauce

2 pounds ground turkey or chicken

1tsp grated fresh ginger

1/2 cup panko bread crumbs

hamburger buns

monterey jack or chedder cheese slices


Directions:

Drain the pineapple; reserving 1/2 cup of the juice. Reserve 2 pineapple slices for snack or other use.  Stir together teriyaki sauce and reserved pineapple juice in a small bowl.  Mix together turkey, ginger, bread crumbs and 1/4 cup of the teriyakis mixture.  Shape into 8 patties.  Grill patties, brushing with the remaining teriyaki mixture until brown nad cooked through.  PLace pineapple slices on grill and cook until lightly golden brown.  Serve burger on the buns with cheese and pineapple.

How about some salads .. like a fruit salad, macaroni salad or even potato salad,
They are all easy to make too :)
