I'm trying to come up with a menu plan. I've got a lot written down on our menu but I was wondering what are some of your favorite things to make and if you would add the recipes?

We have been loving this black bean casserole.

4 cloves of chopped garlic

2 & 1/4 tsp of cummin

1/8-1/4 tsp of cayenne pepper (depends on how spicy you want it)

salt to taste

2 tbs of olive oil

4 small or 2 large cans of black beans

1/2 cup vegetable broth

6-8 whole wheat or flour tortillas

24 oz of chunky salsa

2 cups of shredded sharp cheddar cheese, or your other favorite cheese such as colby jack.

In a skillet, heat olive oil on medium low, add garlic and cook for about 3 minutes. Preheat oven to 375. Add black beans to skillet and cook for 3 minutes the add broth, cummin, cayenne pepper, and salt cook for an additional 4 minutes. Spray the bottom of a 9x13in pan with non-stick spray. layer 1&1/2-2 tortillas, add 1/3 of beans, 1/3 jar of salsa and 1/3 pack of cheese. repeat this for additional 2 layers. You can cover this with foil and cook for 10 mins, uncover and cook for an additional 15-20 minutes or cook without foil for 20 minutes.
