Crock Pot Menu.

It's my turn in the crock pot group to post my weekly menu so I thought I would share what I came up with this week.  I have not made these yet but plan to make a few of them this week.- ENJOY!

 Week 293 of Menu, Shopping List & Recipes & Go~alongs

Menu ~  

Monday ~ Crock Pot Bacon Ranch Chicken

Tuesday ~ Taco Soup

Wednesday ~  Slow Cooker Creamy Spaghetti

Thursday ~ Sesame Beef and Broccoli

Friday ~ Sausage Breakfast Casserole


Shopping List ~  

Monday ~ Crock Pot Bacon Ranch Chicken

2 strips of bacon, cooked and crumbled (can use turkey bacon)
1 tsp minced garlic
1 (1 oz) packet dry ranch dressing mix
1 (10.75 oz) can 98% fat-free condensed cream of chicken soup
1 cup sour cream (fat-free works great)
1 lb. chicken breasts (can be frozen or defrosted)
8 oz. of your favorite pasta, cooked

Go~ along ~  Garlic Bread, Garden or Cesar Salad, or steamed broccoli


Tuesday ~ Taco Soup

1 (15 oz) can black beans
1 (15 oz) can pinto beans
1 (14.5 oz) can diced tomatoes
1 (15 oz) can sweet corn
1 (12.5 oz) can chicken breast
1 (10.75 oz) can cream of chicken soup
1 (10 oz) can green enchilada sauce
1 (14 oz) can chicken broth
1 (1 oz) packet taco seasoning

Go~along ~ Sour Cream and Shredded cheese (to put on top, optional), Cheesy biscuits.


Wednesday ~ Slow Cooker Creamy Spaghetti 

Serves 10-12 for smaller portion simply cut in half.

1 pound Italian sausage
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon garlic salt
3 (24 ounce) jars of pasta sauce
1 pound spaghetti noodles
1/2 cup Parmesan cheese (grated or powder)
4 ounces fat free cream cheese
1 (14.5 ounce) can chicken broth

Go~along ~  Salad and either garlic bread or knots or simply crusty bread.


Thursday ~ Sesame Beef and Broccoli

1½ lbs. boneless beef chuck roast, sliced into thin strips
1 cup beef broth
½ cup oyster sauce- (found in the ethnic foods isle at the grocery store near the teryaki sauce)
½–1 lb. fresh or frozen broccoli florets
¼ cup water
2 tablespoons cornstarch
Cooked rice (optional)
Sesame seeds (for garnish)

Go~along ~  White or fried rice.


Friday ~ Sausage Breakfast Casserole

1 (30 oz) package frozen shredded hash brown potatoes
1 lb ground sausage, browned and drained
2 cups shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 onion, diced
1 green pepper, diced
1 red pepper, diced
12 eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Go~along ~  toast, hashbrowns, or even some pancakes :) 


Recipes ~ 

Monday ~ Crock Pot Bacon Ranch Chicken

2 strips of bacon, cooked and crumbled (can use turkey bacon)

1 (10.75 oz) can 98% fat-free condensed cream of chicken soup
1 cup sour cream (fat-free works great)
1 lb. chicken breasts (can be frozen or defrosted)
8 oz. of your favorite pasta, cooked

Directions:
Spray slow cooker with non-stick cooking spray and place chicken in the crock pot.
Mix the bacon, garlic, ranch dressing mix, soup, and sour cream together and pour over the top of the chicken. Cook on high for 3-4 hours or low for 6 hours. Shred chicken with two forks. Cook pasta as directed on package and serve chicken over pasta.


Tuesday ~  Taco Soup

1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can pinto beans, drained and rinsed
1 (14.5 oz) can diced tomatoes, drained
1 (15 oz) can sweet corn, drained
1 (12.5 oz) can chicken breast, drained
1 (10.75 oz) can cream of chicken soup
1 (10 oz) can green enchilada sauce
1 (14 oz) can chicken broth
1 (1 oz) packet taco seasoning

Directions:
Spray slow cooker with non-stick cooking spray. Dump all the ingredients into slow cooker and stir together. Cook on low heat for 2-3 hours. Serve with shredded cheese and tortilla chips.


Wednesday ~ Slow Cooker Creamy Spaghetti

1 pound Italian sausage
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon garlic salt
3 (24 ounce) jars of pasta sauce
1 pound spaghetti noodles
1/2 cup Parmesan cheese (grated or powder)
4 ounces fat free cream cheese
1 (14.5 ounce) can chicken broth

Directions: 

Brown Italian sausage in a medium skillet on stove top until completely cooked through.  Season sausage with salt, pepper and garlic salt.  Drain excess grease and set aside.  Pour one jar of pasta sauce in the bottom of slow cooker.  Break all spaghetti noodles in half and place on top of sauce.  Pour browned sausage over noodles and sprinkle on Parmesan cheese.  Cut cream cheese into bite-sized pieces and place on top of cheese.  Pour another jar of pasta sauce over cream cheese.  Cover slow cooker with lid and cook on high for 3 hours.  After 3 hours, remove lid and stir contents of the slow cooker.  Pour in the last jar of pasta sauce and can of chicken broth.  Replace lid and cook another hour on low or until ready to serve.


Thursday ~ Sesame Beef and Broccoli

1½ lbs. boneless beef chuck roast, sliced into thin strips
1 cup beef broth
½ cup oyster sauce*
½–1 lb. fresh or frozen broccoli florets
¼ cup water
2 tablespoons cornstarch
Cooked rice (optional)
Sesame seeds (for garnish)

Directions:

In slow-cooker, arrange beef strips; pour beef broth and oyster sauce over the beef.
Cover and cook on LOW for 6–8 hours or on HIGH for 3–4 hours or until beef is very tender.
If using fresh broccoli, place broccoli in microwave-safe bowl with ¼ cup water. Microwave 4–5 minutes, until broccoli is tender. If using frozen broccoli, follow cooking directions on packaging.
In a cup, combine cornstarch and 2 tablespoons cooking liquid; stir until smooth. Add to slow-cooker and stir well to combine. Drain the broccoli and stir into the slow-cooker. Cook uncovered on HIGH for about 15 minutes or until sauce is thickened. Serve over hot, cooked rice and garnish with sesame seeds.


Friday ~ Sausage Breakfast Casserole

1 (30 oz) package frozen shredded hash brown potatoes

Directions:
Spray a 6 quart slow cooker with non-stick cooking spray (you cannot make this recipe in a smaller crock pot because it won't fit). Layer 1/2 of the potatoes on the bottom of slow cooker.
Top with half of the sausage, cheddar and mozzarella cheese, onions, green peppers, and red peppers. Repeat the layers again.
Beat eggs, milk, and salt and pepper in large bowl with a wire whisk until well blended. Pour egg mixture evenly over potato-sausage mixture.
Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set.
Top with green onions, salsa, tomatoes, mushrooms, avocado- whatever you like!

Yes please share the group name.. We kind of went on hiatis a bit but we are trying to get it back on track.  The more the merrier :)
