My kids love when I make Cheeseburger Soup. Made it last night in fact.
1 lb ground beef (or turkey)
1 package frozen hashbrowns
1 small onion, diced
1 c. carrots, diced
1 c. celery, diced
4 cans (or one box) chicken broth
1 c. milk
4 oz. velveeta light
Brown ground beef and drain. Place in large pot.
Add a small amount of oil to skillet and cook hashbrowns and other vegetables until browned/soft. Add to pot.
Add chicken broth to pot and bring to a boil.
Lower heat to medium and add milk and pieces of velveeta. Bring back to a boil.
Enjoy with a fresh roll.
