Crustless sausage cheddar quiche

  • 6 to 8 oz. sausage, cooked, drained and crumbled
  • 4 large eggs
  • 1 1/2 c. half & half (I use evaporated milk)
  • 1/4 tsp. dried thyme
  • 1/8 tsp. pepper
  • 1 c. shredded sharp cheddar cheese

In a small bowl, whisk together all ingredients.  Pour into a pie dish that has been sprayed with cooking spray.  Bake at 375 degrees for 30 to 35 minutes, until set or a knife inserted near the center comes out clean.  Serve with sliced fresh tomatoes.

 This would be good for someone who doesn't want breads or grains, but I love quiche crust.

You can also bake it in a pre-baked crust. 

We avoid breads and grains.

Would this work in a mini muffin pan also?

Yes!  They'll be mini quiches!   Just don't bake them as long.  I'd try 10 minutes first, then keep adding 3 to 5 minutes of bake time until they're done.
