We're starting a carb/sugar detox for the next 3 weeks (after today).
Breakfasts: omelets with ham, cheese, variety of veggies; sausage & veggie frittata, cottage cheese & veggie salads
Lunches: leftovers; huge chef salads; fish cakes; homemade soup
Sunday (1/1): ham, cheesy hash browns, green beans, layer salad
Monday: beef & broccoli salad
Tuesday: meatloaf, carrot salad, green beans
Wednesday: baked chicken strips, roasted veggies, beet pickles
Thursday: taco soup (using leftover meatloaf)
Friday: rosemary chicken, tossed salad
Saturday: Swiss steak, spaghetti squash

they're really good...then again, I've grown up eating them and so have my kids. In 2010 I canned 74 pints of them and I had to can even more in 2011. One pint disappears at a meal!

It's a type of low carb winter squash. Bake it, then rake the insides with a fork to remove the fibrous squash in strands. You can use it like spaghetti pasta with spaghetti sauce, but I like to eat it plain with a bit of butter. It's very mild, slightly sweet.

Do you happen to belong to a church or organization that has a meal delivery service? Our church takes meals to people that are sick/recovering/injured. If so, maybe let someone know you could use the help...just a thought.

Friday Breakfast Chocolate chip waffles , maple syrup
Dinner Spaghetti and Meatballs , Salad with ranch
Saturday Breakfast boiled eggs, hot sauce, celery and peanut butter or cream cheese
Lunch Meatballs subs with leftover meatballs from lastnight , salad
