I need some new recipes for ground beef other than chili, burgers, and tacos. Please share your delicious ground beef recipes here. :-)

I make a southwest kind of soup that my family loves - its always a little bit different, just depending on what I have on hand.  Basically, in the slow cooker I combine browned ground beef, 2 cans of petite diced tomatoes, drained black beans (almost a whole can), a few handfull of frozen corn, and almost a whole envelope of dry ranch dressing.  I cook it on medium for a few hours.

Mix
together beef, onion, saltines, egg and 1 tsp. beef boullion granules.
Form patties with hands and fry in small amount of margarine on both
sides. When all patties are browned, cover with 2 cups water and rest of
beef boullion. Cover with lid and simmer for about 15 minutes. Remove
patties to a plate and make gravy by slowly adding the cornstarch/water
mix. You may add more water and beef boullion granules to taste.

Stuffed Pepper Soup Recipe

Stuffed Pepper Soup Recipe
  • Prep: 15 min. Cook: 30 min.
  • Yield: 10 Servings

Ingredients

  • 2 pounds ground beef
  • 2 quarts water
  • 1 can (28 ounces) tomato sauce
  • 1 can (28 ounces) diced tomatoes, undrained
  • 2 cups cooked long grain rice
  • 2 cups chopped green peppers
  • 1/4 cup packed brown sugar
  • 2 teaspoons salt
  • 2 teaspoons beef bouillon granules
  • 1 teaspoon pepper

Directions

  • In a Dutch oven or a big pot, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 30-40 minutes or until peppers are tender. Yield: 10 servings (2-1/2 quarts).
