Double your pleasure with a summer classic salad when you use two colorful tomato varieties.

Makes: 6 servings
1 large red tomato, sliced
1 large yellow tomato, sliced
1 medium cucumber, sliced
8 oz. fresh mozzarella cheese, sliced
2 tablespoons extra-virgin olive oil
1/8 teaspoon freshly ground black pepper
1/3 cup coarsely chopped fresh basil or lemon basil
1 On large platter, arrange tomato, cucumber and mozzarella slices overlapping in a single layer.
2 In small bowl, combine oil, lemon juice, salt and pepper; mix well. Drizzle over salad. Sprinkle with basil.
