This is a very lean week for us...we didn't have a lot to spend on groceries.  With a lot of planning and panicking, I came up with this meal plan, and it cost $22.56 for fresh eggs & produce for the week!

May 6 – 12, 2012


Sunday:

breakfast - baked sausage/spinach/cheddar frittata , veggie juice

lunch - taco soup with paleo “corn” bread

dinner - porcupine meatballs/boiled potatoes/steamed broccoli


Monday:

breakfast - almond flour pancakes, veggie juice

lunch - beefy veggie soup & lemon muffins

dinner - crockpot Southern-style pork neck bones/gravy/steamed white rice/glazed carrots


Tuesday:

breakfast – omelets/ paleo cinnamon muffins with apple butter/oranges

lunch – leftovers from Monday dinner

dinner - sloppy joe stew or casserole/tossed salad


Wednesday:

breakfast - crepes with lemon & cheese filling, veggie juice

lunch - leftovers from Tuesday dinner

dinner - crockpot cheesy chicken & ham/roasted sweet potato balls/beet pickles


Thursday:

breakfast – fried eggs & oranges, veggie juice

lunch - salmon patties/side salad,, leftovers

dinner - salisbury patties w/gravy/paleo biscuits/green beans


Friday:

breakfast - grain-free waffles, veggie juice

lunch - tuna salad on grain-free panini or sesame onion crackers

dinner - baked buffalo chicken/oven fries/green beans/beet pickles


Saturday:

breakfast - scrambled egg muffins, veggie juice

lunch – leftovers from Friday's dinner

dinner - crockpot Swiss steak/baked sweet potatoes/tossed salad

Thanks!  I wish I didn't have to be, but it does help get the pantry and freezers cleaned out, and I surprise myself once in a while with finding a new recipe that I never thought I'd try.

Since it's already bed time Sunday, here's my plan thru next Sat:  I copied from Excel, sorry if formatting is weird.

Mon banana nut muffins nachos New York steaks, baked potatoes
Tues breakfast burritos tuna cream of zucchini soup (E)
Weds cranberry orange waffles egg salad beef stew
Thurs sausage and eggs pb&j loin chops with apricot glaze
Fri frittata leftovers Mexican lasagna (E) & cilantro lime cole slaw
Sat biscuits & eggs bacon & Brussels sprout salad ham

Sunday brunch out with family Birthday Walnut Grove

Monday Over easy eggs, sausage , toast apple juice

Dinner Rubens again @ DD's request , Asian coleslaw 

Tuesday French Toast , fresh fruit 

Ravioli, salad, garlic toast

Wednesday fruit smoothie, yogurt, boiled egg if she wants.

Italian open faced subs , lettuce , tomato, onions, banana peppers , Italian dressing...meat and cheese

Thursday western omelet

Sausage, onion pizza , home cut fries

Friday DD's choice of breakfast

Baked Fish, Corn, pasta 

Saturday Fresh Fruit , Oatmeal, Cereal DD's choice

Bruschetta baked chicken , tomatoes, onions, basil, olive oil... , fried rice

fruit, string cheese, yogurt , boiled eggs around for snacks.

May 6-last night was burgers with potatoes
May 7-tonight is farfalle with chicken and spinach with some garlic bread
May 8-Parmesan crusted tilapia w/ honey carrots and mashed potatoes
May 9-broccoli and cheese stuffed chicken with corn and baked beans
May 10-honey chipolte salmon with corn and a salad
May 11- I'm going to Boston to meet my newest niece and DH is staying home wi the kids-up to Jim for them and idk about me :)

Wednesday: B - Scrambled Eggs & Bagels w/Crumble and Brown Strawberry Spread, L - Crackers w/ham, roast beef & cheese, D - Leftover Chicken Fajitas w/rice & beans

Thursday: B - Breakfast Burritos, L - Egg Salad Sandwiches, D - Eggplant Parmesean w/Thin Spaghetti

Friday: B - Scrambled Eggs & Bagel w/Strawberry Yogurt Spread, L - Subway Black Forest Hame & Turkey Sandwich, D - Cheese Enchiladas w/ Rice & Beans

Saturday: B - Biscuits w/ Sausage Gravy & Eggs, L - Tuna w/ Crackers, D - Leftover Eggplant Parmesan w/ Thin Spaghetti
