1/4th a package of bacon
2 chicken breast already cooked
1 head califlower
3 stalks celery
1 med. onion
1/3 to 1/2 stick butter
2 eggs
splash of heavy cream
salt and pepper to taste
2 cups cheese ( I used Feta) Hubby said he would have liked cheddar LOL
I diced the bacon and the onion and put it into the saute pan then cubed the celery, califlower, and chicken breast to about the same size.Add them once the bacon is browned, cook until veggies are softened.Then, whisk the egg, 1/2 melted butter, splash if cream and part of the cheese. I brushed the bottom of the pan wit hthe melted butter then added what was left to the egg mixture. Layered half the sauted stuff then poured half of the egg mixture. Continue wit hthe last half. Sprinkle with the rest of the cheese. Cover for 30 min. at 375. Then I uncovered the top and cooked until browned. Maybe 15 more minutes. I took it out and let it sit for 10 minutes.
I really liked it alot. It gave me that baked potato taste without the work of twice baking. Or the potato. I would have added garlic too but DH used it up the day before. The kids and the hubby said to add it to the regular menu it was a keeper. The kids and hubby added sour cream to the top.

Because I have 5 people in my family and there is almost always 1 or 2 left over chicken breasts when ew make them. It won't feed the whole family but, added to the casserole it turns the dish from a side to a main.
