Peanut Butter Cookies Recipe
INGREDIENTS
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1/2 cup butter, room temperature
- 1/2 cup peanut butter
- 1 egg
- 1 1/4 cup flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
METHOD
1 Beat the butter until creamy, 2 minutes. Add the sugars, beat for 2 more minutes. Mix in the peanut butter and egg. Mix together the dry ingredients - flour, baking soda, baking powder and salt. Stir the dry ingredients into the sugar butter mixture.
2 Wrap dough in plastic and refrigerate at least 3 hours.

3 Preheat oven to 375°F. Shape dough into 1 1/4 inch balls. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with a fork. Bake until light brown, 9 to 10 minutes. Cool on baking sheets for a minute; transfer to rack to cool completely.
For chewier cookies, bake at 300°F for 15 minutes.
Yield: Makes about 2 dozen cookies.
TONY'S TIGER BITES
1 (10 oz.) pkg. (about 40) regular marshmallows
1/4 c. butter
1/3 c. peanut butter
7 1/2 c. or 1 (10 oz.) pkg. Frosted Flakes
Melt butter in saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat. Stir in peanut butter until mixture is smooth. Add Frosted Flakes cereal, stirring until well coated. Using a buttered spatula or waxed paper, press mixture into a lightly greased 13"x9"x2" pan. Cut into bars.
1 cup butter (2 sticks), softened
1 cup granulated sugar
2/3 cup firmly packed light brown sugar
2 teaspoons vanilla extract
2 large eggs
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 cups old fashioned rolled oats
3/4 cup raisins
Preheat oven to 350 Line baking sheets with parchment paper
Mix butter, granulated sugar, brown sugar, vanilla and eggs in a large bowl. Beat with an electric mixer on high speed until fluffy. Combine flour, baking soda and salt in a medium bowl; beat into butter mixture on low speed. Stir in rolled oats and raisins until well blended.
Drop dough by heaping tablespoonfuls about 3inches apart on prepared baking sheets. Bake until golden, 12-13 minutes. Transfer to wire racks to cool.
Butter Pecan Cookies
1 yellow or white cake mix
2 eggs
½ cup butter (1 stick)
1 can (16 oz) Coconut-pecan frosting
Preheat oven to 350. Mix with a spoon, cake mix, eggs, butter and frosting. Refrigerate dough for 2 hours. Drop dough balls onto a lightly greased
cookie sheet. (I used a tablespoon to scoop dough,and then rolled it into a
ball) Bake 8-12 minutes or till light brown around edges. Remove to rack to cool.
Macadamia Nut Cookies
1 yellow or white cake mix
2 eggs
1/3 cup vegetable oil
1 cup white chocolate chips or chunks
½ cup chopped macadamia nuts
Preheat oven to 350. Whit a spoon, mix cake mix, eggs, and oil together. Stir in white chocolate and nuts. Drop dough balls onto an ungreased cookie sheet. Bake 8-12 minutes or till light golden brown around edges. Remove
to rack to cool. One cup semi-sweet or milk chocolate chips or chunks
can be substituted.
Peanut Butter Bites
1/2 cup sugar
1/2 cup light corn syrup
1 cup peanut butter
2 cups rice cereal
Combine sugar and syrup in a medium saucepan; cook over medium heat until mixture comes to a boil, stirring constantly. Remove from heat. Add peanut butter, stirring till smooth. Stir in cereal. Drop mixture by tablespoons onto wax paper. Let cool completely. Makes 3 dozen.
Peanut Butter Cookies
1 cup peanut butter (any kind)
1 cup sugar (granulated)
1 large egg
Preheat oven 350°F.
Mix sugar and egg together, then add peanut butter. That's it. Now form into 1" balls an press with fork. Dip fork in a little sugar so it won't stick.
Bake for 10 to 12 minutes at 350°F.

Easy Cookies
1 c. sugar
1 egg
2 tsp. baking powder
1 tsp. vanilla
2 3/4 c. flour
Note: Dough can be tinted with food coloring.
Roll dough out to 1/8 inch thick. Dip cutters in flour before each use. Bake on ungreased cookie sheet on top rack of oven for 6 to 7 minutes or until cookies are lightly browned. Makes approximately 3 dozen 3 inch cookies.

1 tsp. vanilla
1 pkg. semi sweet chocolate chips
1/2 c. soft butter
2 eggs
