It's actually from the French word for a (usually ceramic) cooking pan that is used in the oven for cooking and then also for serving. Modern day meaning is usually for a one-dish meal cooked in the oven and the vessel itself is called a casserole dish. Though there are casseroles that are just vegetables-like hash brown casserole or summer squash casserole, most casseroles contain some type of protein, vegetables, starch which could be rice, potatoes, pasta or bread, and a sauce to hold it all together.
