Daily Crock Pot Recipe! (Gingered Beef with Peppers and Mushrooms)

GINGERED BEEF WITH PEPPERS AND MUSHROOMS
1-1/2 lbs boneless beef top round steak, cut into 3/4-inch cubes
24 baby carrots
1 red bell pepper, chopped
1 green bell pepper, chopped
1 onion, chopped
1 pkg (8-oz) mushrooms, halved
2 Tbs grated fresh ginger
1 cup lower-sodium beef broth
1/2 cup hoisin sauce
1/4 cup quick-cooking tapioca
Hot cooked rice, optional
Combine beef, carrots, bell peppers, onion, mushrooms, ginger, broth, hoisin sauce and tapioca in slow cooker. Cover and cook on LOW 8 to 9 hours. Serve over rice, if desired.

This looks amazing. I love Ginger. I'd just leave the mushrooms out. ;-)
