July 29 – August 4, 2012


Sunday:

breakfast – eggs in ham cups/veggie juice

lunch & dinner – family reunion at DH's parents' – taking paleo blueberry lemon bars and blackberry cream cheese bars


Monday:

breakfast - pumpkin frittata, veggie juice

lunch - egg salad on cucumber slices

dinner - Italian sausage & mushroom stuffed zucchini/salad/beet pickles


Tuesday:

breakfast – dairy-free coconut custard with berries/veggie juice

lunch - nacho cheese soup

dinner – stuffed meatloaf/twice baked non-potato casserole, green beans


Wednesday:

breakfast - grain-free carrot cake pancakes/veggie juice

lunch - Greek-style chicken cutlets/salad

dinner - herb crusted ham roast/ cucumber salad/ beet pickles/ green beans


Thursday:

breakfast – grain-free chunky monkey muffins, hard boiled eggs, veggie juice

lunch - cold cucumber soup or cucumber lime smoothie, tuna patties

dinner - Sweet potato & spinach hash with baked eggs/ tossed salad


Friday:

breakfast - grain-free breakfast burritos/veggie juice

lunch - turkey & veggie sandwiches on grain-free homemade bread

dinner - wanna-be-parmesan chicken/sauteed zucchini/green beans


Saturday:

breakfast - omelets with homemade hash browns

lunch – leftovers/clean out the fridge

dinner - almond flour crust pepperoni pizza/salad

I don't have a great plan for the rest of the week. School is kicking my butt right now. We have been flying by the seat of our pants this last week, eating what ever is in the freezer and lots of salads, wraps, and eggs. Today we are headed to a friends for a bbq. Then sunday we will have bbqed lemon chicken, grilled veggies, and cucumber salad. Then monday will be left overs and tuesday is payday so by then I will have meals planned again and be on track. Its a good thing I freezer cook too. LOL

Monday rotisserie  chicken / coleslaw , sliced tomatoes with fresh Mozzarella 

Tuesdays Taco's , mexican rice, corn all the toppings 

Wedesday chef salad using up leftover toppings from Tues. Taco's

Thursday Baked fish, macaroni and cheese , green beans 

Friday City chicken on a stick, red skinned garlic/butter potatoes , broccoli

Saturday Stuffed steak, baked beans, sugar snap peas

going to make some zucchini bread, boiled eggs then yogurt , flapjacks, fruit smoothies or fresh fruit , over easy , scrambled any kind of eggs for Breakfast

Sunday is pork roast.
Monday is chicken primavera
Tuesday is Sweet N Sour Chicken
Wednesday is Basil Chicken Spaghetti
Thursday is Cream cheese enchiladas.

Rhonda this menu is soo boring! Lol where's the yummy pizza and pop tarts.

Actually it sounds delish! I havent had ham since the holidays. I think I'm going to have to watch for a sale.

Hm.  I could have sworn I put pizza on for Saturday night....

POP TARTS!!!!!!!!???????  Ever had a chunky monkey muffin?  Chocolate chips, bananas, nuts....so much better than a boring Pop Tart!

 Sunday brunch-Crab cake Benedicts, fruit salad, mimosas-adults, orange-mango punch-kids
         dinner-Pork roast, stuffed baked potatoes, fried okra, corn sticks, fresh peach pie

Monday-Pop Tarts, chocolate milk
            Chef Salad, corn muffins
            Ham steaks, potato patties, Italian green beans

Tuesday-Pork, potato, onion hash, boiled eggs, biscuits            
            Tuna salad boats, wheat crackers
            Swiss steak, noodles, lemon broccoli

Wednesday-Spanish omelettes, English muffins
                 Shrimp salad on Croissants
                 Red Beans & rice, smoked sausage, sliced tomatoes & green onions, French bread 

Thursday-Yogurt,peach, granola parfaits
              Butter lettuce salad with goat cheese, walnuts,& figs
              Grilled fish, zucchini & yellow squash, artichoke bread

Friday-Cranberry scones, boiled eggs
          Chicken Taco soup
          Grilled Scallops, wild mushroom risotto, asparagus

Saturday-Sausage & Swiss breakfast casserole, grits

 Same as a classic Eggs Benedict-English muffins, poached eggs, Hollandaise sauce, but use crab cakes instead of Canadian bacon. We had another family over for brunch, so we set out crab traps and let the kids bring them in, then help pick the meat out. The kids enjoy it, and I think it's important they learn where our food comes from.
