Fresh okra is so good. There are as many ways to fry it as there are cooks. This is my favorite.
1 pound fresh okra
1 egg, sdlightly beaten
2 cups vegetable oil
1 cup buttermilk
1 1/2 cups all-purpose flour
¾ cup cornmeal
1 teaspoon salt, or Lawrey’s seasoned salt
Wash and trim the okra and slice it into 1/2-inch pieces.
Heat the vegetable oil in a deep fryer or skillet to 350 degrees.
Pour egg and buttermilk. into a bowl, mix in okra and let set 15 minutes.
In another large bowl, mix the flour, cornmeal and salt.
Drain the okra, and dip the okra pieces in the flour and cornmeal mixture. Use a sieve or strainer to shake off all excess flour mixture.
Deep-fry the okra until it is golden brown, about 3 minutes.
Lift the okra from the oil with a slotted spoon. Drain on paper towels and keep warm in oven while frying the rest.
