These cookies from At My Grandmotherâ€™s Knee sure make me feel better.
Feel Better Cookies
1 3/4 Cups all purpose flour, sifted
1/2 tsp baking soda
1/2 tsp salt
1/2 cup cocoa
1/2 cup shortening
1 cup sugar
1 large egg
1/2 cup milk
1 tsp vanilla extract
36 marshmallows, cut in half
2 Tbls butter
5 Tbls cocoa
4 tsp milk
2 1/2 cups powdered sugar
l. Preheat oven to 350 degrees
2. To make the cookies, mix the flour, baking soda, salt and cocoa in a medium bowl. In the bowl of an electric mixer, beat the shortening, sugar, egg, milk and vanilla until fluffy.
Gradually add the flour mixture and stir with a wooden spoon until thoroughly mixed.
3. On a lightly floured work surface, roll out the dough to a 1/4 inch thickness. Cut out the
cookies with a circular cookie cutter and place the cookies 2 inches apart on ungreased
4. Bake for 8 minutes, remove from the oven and place a halved marshmallow (cut side down)
on each cookie. Return the cookie sheet to the oven and bake for 2 more minutes to melt
the marshmallows. Allow the cookies to cool on the cookie sheets for 5 minutes before
transferring to a wire rack to finish cooling.
5. To make the icing, combine the butter, cocoa and milk in a medium bowl and stir until
well blended. Gradually add the powdered sugar and beat until well blended. Spread
the icing on the cookie when cool.
the icing is just drizzled over the cookie so some of the marshmallow shows through.
