Make the Most of Summer Produce

The key to making the most of summer produce is knowing what to do with it when if comes your way. Maybe you find a great sale at the grocery store or a neighbor ding-dong ditches a barrel of zucchini on your front step. Maybe your produce box is full of something you don’t know what to do with.

Darn!  I really need some ideas for cucumbers that don't involve pickling.

We make this in the summer.  It's great at picnics and BBQ's.

Cucumber Salad

2 small cucumbers, cubed
1/2 medium onion, sliced (red onions are pretty)
1/2 cup white vinegar
1 tablespoon oil
1 1/2 teaspoon salt
1 teaspoon pepper
1/2 tablespoon sugar
Fresh dill to taste

Marinate at least 30 minutes (longer is better).  Chill and serve.

Do you mean a non vinegar pickling, or no pickling period?  Fermentation preserves w/o vinegar if that's what you're trying to avoid.

Lemon juice and salt on slices is one of my favorite snacks.

no fermentation or vinegar pickling.  My dad's good at that (fermentation) but not me.  I'm not a huge fan of anything but dill pickles anyway.  I don't mind the vinegar.
