I haven't tried this one, but it sounds good and colorful! Not spicy, though.
- 1 jar (6.5 oz.) marinated artichoke hearts, undrained and chopped fine
- 1/4 c. chopped black olives
- 2 Tbsp. chopped red onion
- 3 medium plum tomatoes, chopped
- 1 garlic clove, minced
- 2 Tbsp. snipped fresh basil
- salt and pepper to taste
Combine all vegetables and add basil. Salt and pepper to taste.
Yield: 16 servings
