September 30 – October 6, 2012


Sunday:

breakfast – apple pumpkin bake, veggie juice

lunch - taco salad

dinner - spicy roast chicken, butternut squash, roasted root veggies


Monday:

breakfast – veggie hash & eggs, veggie juice

lunch - leftovers

dinner – grilled steak w/applewood rub, spaghetti squash with sauteed veggies


Tuesday:

breakfast – grab bag (pancakes/waffles from freezer), veggie juice

lunch – pizza soup

dinner - grilled Catalina chicken, vegetable lasagna (sans noodles)


Wednesday:

breakfast – veggie omelets, veggie juice

lunch – chef salad

dinner – stuffed meatloaf, broccoli casserole


Thursday:

breakfast - vegetarian red flannel hash, eggs, veggie juice

lunch - leftovers

dinner - chicken a la king w/paleo butter biscuits, carrot salad


Friday:

breakfast - breakfast tater tot casserole

lunch – tuna patties with side salad

dinner - beef roast, potatoes, carrots


Saturday:

breakfast – waffle iron hash browns, eggs, veggie juice

lunch – leftovers/clean out the fridge

dinner - crockpot beef in mushroom gravy, green beans, mashed faux-tatoes

cheeseburgers , chopped salad leftovers, sweet potato fries

pot roast, carrots, onion, homemade garlic dinner rolls

 Sunday-brunch-Banana-Pecan pancakes with Peanut butter syrup, bacon
            dinner-Pork roast, baked sweet potatoes, collard greens, cheese biscuits, banana pudding

Monday-Oatmeal with apples, pecans and raisins, boiled eggs
              Pork fried rice with veggies
              Turkey tetrazzini, spinach salad

Tuesday-Strawberry muffins, peach & yogurt parfait
              Cream of squash soup, plums
              Stuffed artichokes, Osso Buco, mushroom risotto, garlic hericot verte, Marble cheesecake-DH's birthday

Wednesday-Cheddar-mushroom omelet, Parmesan hashbrown cups
                   Ham salad sandwiches, cucumber slices
                   Out for dinner-our anniversary

Thursday-Veggie Egg Tarts, cheese biscuits
               Apple Pecan Salad
               Swiss steak, mashed potatoes, artichoke & green bean casserole

Friday- Country ham, biscuits & gravy, cinnamon apples
            Pierogies with sauteed onions, coleslaw
            Grilled fish, Bacon-Ranch potatoes in packet, grilled carrots

Saturday-Breakfast tater tot casserole, sauteed pears
               Chef salad with Avocado Ranch dressing                    
              Chicken Francese, cabbage & noodles, squash patties

Thursday- Chicken Schnitzel and Spatzel

Very simple:


Tomato/Basil/Pepper soup

  • 4 scallions or 4 small onions, sliced thin
  • 1 c. diced sweet red bell pepper
  • 2 Tbsp. butter
  • 28 to 32 oz. diced tomatoes, undrained
  • 1 3/4 c. chicken broth
  • 3/4 tsp. basil
  • Mozzarella cheese (optional)

Cook scallions/onions and peppers in butter until tender.  Add tomatoes, broth, and basil.  Bring to a boil and simmer for 10 minutes.  Top with shredded cheese.

NOTE:  you can also add diced pepperoni for a more "pizza" soup.

Monday - Tennessee rubbed grilled Pork chops, Pac Choi, Cabbage & Pear Salad

Tuesday - Macaroni Monterey, Carrots, Salad

Wednesday - Grill cheeseburgers, with Onions, Peppers, & Mushrooms, salad.

Haven't planned the rest of the week yet.

Monday:

  • Breakfast: Pancakes and sausage
  • Lunch: Left over Beef-n-noodles
  • Dinner: Chili and Corn Bread

Tuesday

  • Breakfast:Scrambbled eggs and Bacon
  • Lunch: Left over chili made into taco salad
  • Dinner: Oven Fried Chicken, Homemade Mac-n Cheese, and Corn Dessert:apple-pear cake

Wednesday

  • Breakfast: Oatmeal
  • Lunch: Left over Chicken
  • Dinner Veggie Beef Soup and homemade french bread

Thurday

  • Breakfast: Banana-nut bread and fruit
  • Lunch: Left over Veggie Soup
  • Dinner: Garlic Pot Roast, Homemade French Bread and dessert: Rice pudding

Friday:

  • Breakfast: Waffles and Fruit
  • Lunch: Left Over Pot Roast
  • Dinner: Homemade Pizza, bread sticks, salad

Saturday:

  • Omlettes, bacon. fried potatoes and fruit
  • Lunch: Butternut Squash Soup, Salad and French Bread
  • Dinner: Shrimp Stuffed Sole, Asparagus, Spinach Salad and Dessert: Peach Pie
