Caramel Apples

We made these for dessert tonight.

Our 60 year old dinner guest didn't know what caramel apples are-not even familiar with caramel.

Love caramel apples. I like to dice the apples up into bite sized pieces, put them on toothpicks and then dip into the caramel (and roll in walnuts pieces). So much easier to eat! And a lot less messy.

I was thinking about something like this while making them, but it was fun to get a little messy!

We make them this way sometimes for a change The first time I did my friend was like You're ruining it lol but she seen how much easier it was and does hers this way now too

I need a better quality candy thermometer because the caramel never really set up.  This morning the stuff that "slipped" off is a bit crystalized.  The flavor is fantastic, but it never quite got to caramel consistency.
