We had eaten it all before I thought of it, but our squash pizzas were delicious! They were DH's idea. I cooked a spaghetti squash and pulled out the "noodles". We piled them into heaps about the size of an English muffin on a pizza stone. Seasoned with garlic and Italian seasoning, added parmasean cheese and mozzarella, then heated in the oven. Once they were hot we topped them with sliced tomatoes and salt and put them under the broiler to get a crispy top. 4 of us ate 14 of them! We also had butternut squash soup and then caramel apples for dessert.
