My son is a huge fan of Nutella.  Last week he found the recipe (not sure where) and wrote it out for me:

2 Cups Hazelnuts (I found in bulk foods at my local grocer for $5/ lb)

6 tbs Cocoa powder

1 1/4 cup powdered sugar

1/4 tsp salt

3/4 tsp Vanilla extract (we use 1 tsp)

1/4 cup canola oil (I'm sure peanut oil would work if allergies is not an issue)

Roast nuts in oven @ 375 for 10 mins then allow to cool to room temp.

Put nuts in food processor and process until very smooth (took about 2 mins).

Add remaining ingredients and process until well mixed (less than a min).

Pour into fine strainer and mash through (to remove any grit or large chunks of nuts).

I was thinking it would be cheaper to buy Nutella, but this recipe made 3 of these jars.  So it's actually cheaper to make it.  And it didn't take very long (less than 30 mins.)

And I was able to spend some quality time with my son in the kitchen.  He made it while I watched and helped.

 I wouldn't use peanut oil, the flavor could overpower the taste of the hazelnuts. Canola is flavorless, and would be a better choice.
