I found my family's recipe and all of the variations:
Bread Stuffing for 12 lb. turkey
1 c. butter
3/4 c. finely minced onion
12 cups (3 quarts) coarse bread crumbs or cubes
1 1/2 c. chopped celery stalks and leaves
1 Tbsp. salt
1 Tbsp. dried sage, thyme, or marjoram
1 tsp. pepper
poultry seasoning to taste
Melt butter in large heavy skillet. Add onion and cook until yellow, stirring occasionally. Stir in some of bread crumbs or cubes. Heat, stirring to prevent excessive browning. Turn into deep bowl. Mix in remaining ingredients lightly. For dry stuffing, add little or no liquid. For moist stuffing, mix in lightly with fork just enough hot water or broth to moisten dry crumbs. Cool and stuff in bird when ready to bake, or bake alongside turkey for the last 30-45 minutes of roasting time, basting occasionally with turkey drippings.
Add 3 c. chopped apples for apple stuffing
Add 3 c. chopped drained oysters for oyster stuffing
Add 3 c. sauteed chopped fresh mushrooms for mushroom stuffing
Add 2 c. coarsely chopped pecans for pecan stuffing.

My dad used to make oyster stuffing too, but didn't tell people what was in it and everyone LOVED it.
