This is so indulgently delicious.
Velvet Brie Cheese Soup
6 oz. Brie cheese
½ cup finely diced celery
½ cup finely diced carrot
½ cup finely diced onion
½ cup butter, melted
½ cup flour
2 cups chicken broth
1 teaspoon dried thyme
1 bay leaf
1 pint heavy whipping cream
Cut rind from brie and discard. Set cheese aside. In a medium saucepan, saute celery, carrot and onion in butter over medium heat. Add flour, lower heat to low and continue cooking 4-5 minutes. Add broth, thyme and bay leaf. Cook, stirring constantly until thickened. Add cheese, stirring till smooth. Add whipping cream, cook for 2-3 minutes more or till heated throughout. Remove bay leaf and discard. Makes 3 servings. Can be doubled.
