What a GREAT way to use up leftovers!
Scalloped Potato Soup
- 4 c. leftover scalloped potatoes
- 4 c. chicken broth
- 1 c. cubed ham or smoked sausage
- 1 c. cheddar cheese, shredded
- 1/4 c. parmesan cheese
- salt, pepper, and garlic powder to taste
Put scalloped potatoes in a large pot. Add chicken broth. Break up the potatoes into smaller chunks with a wooden spoon. Add ham or smoked sausage. Bring to a simmer and remove from heat. Add cheeses. Season to taste.
