Scalloped potato soup

What a GREAT way to use up leftovers!

Scalloped Potato Soup

  • 4 c. leftover scalloped potatoes
  • 4 c. chicken broth
  • 1 c. cubed ham or smoked sausage
  • 1 c. cheddar cheese, shredded
  • 1/4 c. parmesan cheese
  • salt, pepper, and garlic powder to taste

Put scalloped potatoes in a large pot.  Add chicken broth.  Break up the potatoes into smaller chunks with a wooden spoon.  Add ham or smoked sausage.  Bring to a simmer and remove from heat.  Add cheeses.  Season to taste.

Yum....we almost never have leftover scalloped potatoes though. They are loved in my family.

Do you think I could use chicken in place of ham...we don't eat ham.
