Cheesy Potato Soup

Serve a rich and hearty cheesy soup with Mini Ham Sandwiches for a comforting cool-weather dinner. When making this soup, stir in the cheese and remove from heat as soon as it melts to prevent curdling.

Cooking Light JANUARY 2012

  • Yield: Serves 4 (serving size: 1 cup)
  • Total:30 Minutes

Ingredients

  • 1 tablespoon butter
  • 1 cup chopped onion
  • 2 1/2 tablespoons all-purpose flour
  • 3 cups chopped red potato (about 1 pound)
  • 1 1/4 cups 1% low-fat milk
  • 3/4 cup fat-free, lower-sodium chicken broth
  • 1/2 cup water
  • 1/2 cup (2 ounces) shredded reduced-fat sharp cheddar cheese
  • 1/8 teaspoon ground red pepper
  • 2 tablespoons chopped green onions

Preparation

1. Melt butter in a medium saucepan over medium-high heat. Add onion to pan; sauté 5 minutes or until onion is tender. Sprinkle with flour; cook 1 minute, stirring onion mixture constantly. Add potato, milk, broth, and 1/2 cup water to pan; bring to a boil. Cover, reduce heat, and simmer 10 minutes. Add 1/2 cup reduced-fat sharp cheddar cheese and ground red pepper; cook 2 minutes or until cheese melts, stirring frequently. Top each serving evenly with 1 1/2 teaspoons chopped green onions.

I love all types of soups but most that I make don't have a recipe, I just kind of throw everything in.

I think im gunna make veggie soup today. A few bags of frozen veggies, can of crushed tomatoes, chicken broth (bullion and warm water) and some spices in the crock til the veggies are cooked

 I'm often making soup to use up vegetables, etc. I saute onions, celery, carrots, sometimes peppers, add a little meat-usually a bit of leftovers, then broth or tomatoes, add whatever vegetables I have on hand, and some seasonings, then sometimes rice or pasta or potatoes. Now I'm getting hungry. lol

Cheesy Broccoli Soup

  • 2 Tbsp. finely chopped onion
  • 2 Tbsp. margarine or butter
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 c. milk
  • 1 c. shredded Velveeta or American cheese
  • 2 chicken bouillon cubes or 2 tsp. instant chicken bouillon
  • 1 bay leaf
  • 1 1/2 c. water
  • 10 - 16 oz. pkg frozen chopped broccoli

In large pan, cook onion in margarine until tender.  Stir in flour, salt and pepper until well blended.  Add milk slowly at first, whisking until smooth; after you've reached a thin paste then add all at once.  Cook until thickened, stirring constantly.  Add cheese and stir until melted.  Remove from heat.  In another pan, dissolve bouillon in water.  Add bay leaf.  Bring to a boil; add broccoli and cook about 5 minutes.  Do not drain.  Add broccoli and cooking liquid to cheese mixture; stir until blended. Remove bay leaf.  Makes 5 to 6 cups.

BEEF BARLEY SOUP IN THE CROCKPOT

In skillet brown beef. Place carrot, celery, green pepper, onion, corn and green beans in crock pot. Put meat on top. Combine tomatoes, barley, parsley, bouillon, salt and basil. Pour over meat. Add water. Cover and cook on LOW for 10-12 hours.

We're having this one tonight:


Chicken Gumbo

  • 6 chicken breasts, cubed
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. cayenne pepper
  • 3 Tbsp. butter
  • 1/2 lb. fully cooked smoked sausage, sliced
  • 14 oz. can or 2 cups chicken broth
  • 3 c. water
  • 1/2 c. uncooked long grain rice
  • 2 8 oz. or 15 oz. can tomato sauce
  • 15 oz. can diced tomatoes
  • 15 oz. can whole kernel corn, drained
  • 1 medium green pepper, diced

Shake chicken in a container or plastic bag with the salt and peppers.   Brown in a large pan with melted butter.  Add sausage, chicken broth, water and rice.  Bring to a boil, cover and reduce heat.  Simmer for 15 minutes, stirring occasionally, until rice is tender.  Add rest of ingredients and bring to a boil; boil 5 minutes.  Serve.

I love this broccoli soup! I leave out the onions and don't blend it. I just chop the broccoli up in small bits.
