 It's ffffrreeeeeezing here.....a balmy 27 degrees!  How cold is it where you are?  

Going by the temperature in your area (let us know where you are and what the temp is), grab one of your favorite cookbooks and turn to that page......post the recipe you find there.

It is 34 degrees in Oklahoma.  Our high today is 54, it has been really nice here I've had my house open for a few days during the day.  Not today though.   I grabbed my taste of home cookbook.

Chicken-Pesto Pan Pizza Recipe
  • Prep/Total Time: 30 min.
  • Yield: 6-8 Servings

Ingredients

  • 1 tube (13.8 ounces) refrigerated pizza crust
  • 1/2 cup water
  • 3 tablespoons olive oil
  • 1 envelope pesto sauce mix
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1/2 cup ricotta cheese
  • 1/4 cup chopped onion
  • 2 cups shredded cooked chicken
  • 1 jar (4-1/2 ounces) sliced mushrooms, drained
  • 4 plum tomatoes, sliced
  • 1 cup (4 ounces) shredded Swiss cheese
  • 1/4 cup grated Romano cheese

Directions

  • Unroll pizza crust into an ungreased 15-in. x 10-in. x 1-in. baking pan; flatten dough and build up edges slightly. Prick dough several items with a fork. Bake at 425° for 7 minutes or until lightly browned.
  • Meanwhile, combine the water, oil and pesto sauce mix in a saucepan. Cook until heated through (do not boil). Add the spinach, ricotta and onion.
  • Spread over crust. Top with chicken, mushrooms, tomatoes and Swiss and Romano cheeses. Bake at 425° for 7 minutes or until crust is golden and cheese is melted. Yield: 8 servings.

Nutritional Facts1 slice equals 368 calories, 16 g fat (6 g saturated fat), 54 mg cholesterol, 866 mg sodium, 32 g carbohydrate, 3 g fiber, 24 g protein.

It's 78 degrees right now in Mulberry, Florida. I grabbed my Weight Watchers cookbook.

* Tuna Seviche (serves 4)

~ 1 lb sushi-grade tuna, cut into 1/2 inch cubes
~ 2/3 cup lime juice
~ 1 large tomato, seeded and chopped
~ 1 small red onion, very thinly sliced
~ 1/4 cup chopped fresh cilantro
~ 1/2-1 jalapeno pepper, seeded and minced
~ Grated zest of 1/2 orange
~ 1/2 teaspoon salt

1) Mix together tuna and lime juice in large glass bowl. Cover and refrigerate, stirring several times, until tuna is opaque, about 1 hour. Drain tuna and transfer to serving bowl; discard marinade.
2) Add all remaining ingredients to tuna; toss to mix well.

 I LOVE Taste of Home!!!!  It's probably one of my favorite cookbooks/magazines/web sites!  And this recipe sounds wonderful:)

Cranberry Nut Bread

1Cup frozen or fresh cranberries. 1 Teaspoon salt 1/2 Cup nuts
1/2 Teaspoon baking soda 1Tablespoons grated Orange rind
2Tablespoons unsweetened applesauce 2Cups flour
1 egg or equivalent egg substitute
3 (1gram) package sugar substitute 3/4 Cup Orange juice
1 1/2 Teaspoon baking power
1/2Cup 100 per cent fruit Orange marmalade

Preheat oven to 350 degrees . Spray a 9x 5x 3 inches pan with fat free cooking spray.Place cranberries ,nuts, and Orange rind in bowl and set aside. Mix flour ,sugar substitute ,baking powder,salt ,and baking salt in bowl. Cut in applesauce using a pasty blender or two knives . Stir in egg and Orange juice ,mixing just enough to moisten dry ingredients . Fold cranberries mixture . Spoon into prepared pan and bake for 60 minutes or until wooden tooth pick inserted in Venter comes out clean. Cool in pan for 15 minutes ,turn out and cool completely. Heat Orange marmalade in microwave and brush over top of bread .
